
Pumpkin Soup

Ingredients
2 Pumpkins, roasted whole
2 tbsp Olive Oil
2 tbsp Butter
2/3 cloves minced Garlic
3 diced Onions
1 bunch fresh Thyme
1 Leek, chopped
1 tsp Cumin
16 cups Vegetable Stock
Salt & Pepper to taste
1/2 cup Maple Syrup
Directions
- Roast whole pumpkin, peel and chop including seeds.
- Put butter and oil in hot pan; add all vegetables, spices, herbs and simmer to extract flavor.
- Add vegetable stock and bring to boil.
- Simmer 2 hours. Add cream and blend.
Adjust seasoning and add maple syrup.
Serve with chopped herbs of your choice.
